Secondo lo studio, la pizza, almeno come etimo, prende le sue mosse da un mulino nei pressi del fiume Garigliano, che divide il Lazio dalla Campania. Questa denominazione infatti appare per la prima volta in un documento notarile conservato presso l&#8217;Archivio della Cattedrale di Gaeta e redatto nel mese di maggio del 997 d.C.. L&#8217;atto aveva per oggetto la locazione di un mulino presso il fiume Garigliano e del terreno annesso di propriet\u00e0 del vescovato della citt\u00e0 di Gaeta. La locazione aveva effetto giuridico a condizione che \u00ab.. ogni anno nel giorno di Natale del Signore, voi e i vostri eredi dovrete corrispondere sia a noi che ai nostri successori, a titolo di pigione per il soprascritto episcopio e senza alcuna recriminazione, dodici pizze..\u00bb e altro.<\/p>\n<p style=\"text-align: justify;\">Secondo Nocca il termine pizza \u00abpu\u00f2 essere in tal modo annoverato tra i primi vocaboli dell&#8217;italiano volgare\u00bb. Al centro del convegno sar\u00e0 quindi l\u00ab&#8217;archeopizza\u00bb, come \u00e8 nata e come si \u00e8 modificata nel corso dei secoli. Nel 1870, durante il soggiorno partenopeo di Umberto I, la moglie del re, Margherita di Savoia, fu omaggiata con una pizza dai colori della bandiera italiana, e nacque la pizza margherita.
